Strawberry Jam

Ingredients:
- 2 pounds (900 grams) fresh strawberries>> 1kg
- 4 cups (800 grams) granulated sugar>> 888gr
- 1/4 cup (60 milliliters) lemon juice>> 66gr
- 1 tablespoon unsalted butter (optional, helps reduce foaming)


Instructions:

  1. Prepare the strawberries by washing them thoroughly, removing the stems, and cutting them into small pieces. You can mash them with a potato masher or leave them slightly chunky, depending on your preference.

  1. In a large, non-reactive pot, combine the strawberries, sugar, and lemon juice. Stir well to ensure the sugar is evenly distributed.

  1. Let the strawberry mixture sit for about an hour, allowing the sugar to draw out the juice from the berries.

  1. Place the pot on the stove over medium heat. Stir frequently until the sugar has completely dissolved.

  1. If using, add the tablespoon of unsalted butter to the pot. This helps reduce foam that may form on the surface of the jam.

  1. Increase the heat to medium-high and bring the mixture to a rolling boil. Stir frequently to prevent burning or sticking.

  1. As the jam boils, use a spoon or a skimmer to skim off any foam that rises to the surface.

  1. Continue boiling the jam until it reaches the desired consistency. To test if it's done, place a small amount of jam on a chilled plate. If it wrinkles and holds its shape when you push it with your finger, it's ready. If not, continue boiling for a few more minutes and test again.

  1. Seal the jars with sterilized lids and bands. Process the jars in a boiling water bath for about 10 minutes to ensure proper preservation.

  1. Carefully remove the jars from the water bath and let them cool on a towel-lined countertop. As they cool, you may hear the lids popping, indicating a proper seal.

  1. Once fully cooled, store the jars of strawberry jam in a cool, dark place. Properly sealed jars can be stored for up to a year.
